Whole Peeled Tomatoes Production Steps

1. Raw Material Selection

The raw materials for this product generally include tomatoes, water and ingredients such as salt. It is very important to choose only high-quality, fully ripe and firm tomatoes. This ensures a good taste and texture of the product. It is also important to use clean, purified water for washing, processing and cooking

2. Sorting and Grading

Machines sort tomatoes by size, color, and quality to ensure consistency and minimize defects—using only healthy, premium tomatoes. They discard any rotten, bruised, or damaged fruit. This process can occur manually or via fully automated sorting machines.

3. Washing

Now the tomatoes are washed thoroughly in water to remove dirt, debris, and pesticides from them. The remaining stems are also removed.

4. Blanching

Blanching facilitates easier peeling while minimizing waste. Machines first immerse tomatoes in 85–98°C hot water or steam to loosen skins. The heat simultaneously deactivates ripening enzymes, preserving optimal texture and flavor.

5. Peeling

After the skin of the tomatoes is loosened with hot water or steam, peeling is done manually (by workers), mechanically (by special machines), or a combination of both.

6. Filling & Canning

First, the cans are sterilized before being filled. Then, the whole peeled tomatoes are packed into the cans using special, automatic machines. Finally, tomato juice or light tomato puree mixed with salt and a little citric acid is poured into the can and all the empty space inside is filled.

7. Exhausting & Sealing

To prevent oxidation and spoilage of the product, the air inside the can is completely evacuated. The cans are then hermetically sealed using double-seam technology.

7. Heat Processing (Sterilization)

Machines now heat the cans under pressurized steam at 100–121°C to eliminate bacteria, yeast, and mold, ensuring product safety. At the end of the line, they rapidly cool the cans to halt the cooking process.
